Winter in 2015 was drier and cooler than average, with very cold nights in early spring, but fortunately no frosts in the vineyard. Early summer heat promoted early bud burst and consistent warm to hot days with cool nights allowed for a slow ripening period, resulting in premium fruit with true varietal characters.
Select Sauvignon Blanc parcels were taken from ‘Tank Block’ at our family estate vineyard on South Australia’s Limestone Coast. Maturity at harvest was 12 Baume.
The 2016 Wild Violet Sauvignon Blanc is bursting with melon and citrus flavours, presenting an inviting bouquet of freshly squeezed limes. The balanced acidity and a clean, crisp finish compliment seafood dishes, especially Atlantic salmon; equally good with hard cheese. Serve chilled and consume within 2 years for optimal flavour and freshness.
